GAJAR KA HALWA RECIPE



Like a rainbow is full of different colors , we wish our life would also be of different colors , but mostly due to our hectic life schedule we miss to see colors in our life . when I was a child my life was full of surprises , even my lunch box was a little pack of surprise for me. But once we grow up we do get our lunch box but its no more a surprise. 

But still there is a surprise left , we might not get it daily but we do get it once in a week....and  i.e Sunday….Sundays are usually lazy mornings..especially winters , you do not get to see anything but fog early in the morning… on such boring Sundays my mom has little surprises for us ..one such little colorful surprise is Gajar ka halwa….

GAJAR KA HALWA RECIPE
Ingredients required for the recipe:

1.       1 kg juicy carrots
2.       1 cup milk
3.       4 tbsp ghee
4.       8-10 tbsp sugar
5.       Some kaju and raisins
6.       1/3 tsp elaichi powder

INSTRUCTIONS

1. Rinse, peel and grate the carrots.

2. In a kadai or deep thick bottomed pan combine milk and grated carrots. On a low to medium flame, bring the whole mixture to a boil and then simmer. While the mixture is simmering on a low flame, keep on stirring in between. 

3. The grated carrots will cook in the milk and the milk will start to reduce and evaporate. 

4. When the milk has 75% reduced, add the ghee, sugar and powdered cardamom to the mixture. 

5. Stir well and continue to simmer and cook on a low flame. do keep on stirring the gajar halwa in between. 

6. Towards the end, add the cashews, crushed saffron and raisins and simmer till all the milk is evaporated. switch off the burner. 

7. Serve gajar halwa hot, warm or you can also serve it cold.
